Chef Paul Prudhome's
"Turducken Holiday Dinner"

"This is truly a must experience for the serious gourmet holiday home-chef" says Alan Bergelson, a Bergen County resident and customer of Goffle Road Poultry Farm. The Turducken combines the layering of three de-boned fowl (turkey, duck and chicken), interspersed with three flavorful dressings (Andouille SmokedSausage, Cornbread and Oyster) and served with a Sweet Potato Eggplant Gravy. The composite assembly is tied and cooked at a low temperature for 12 to 13 hours. "It is an intricate process but well worth the effort" say the Burgelson family.

Ostrich Shish Kabob

Ostrich squares are marinated in light oil and lemon juice.
Alternate with slices of red & green sweet peppers and onion on wire holders.
Broil to medium rare and serve with white rice, cauliflower buds, broccoli spears and broiled tomatoes parmesan.
Accompany with Red Zinfandel.


Chicken Sausage with Peppers and Rigatoni

1 lb. of chicken sausage, cooked, fried cooled and sliced,
1 large onion (sliced thin),
1 large red pepper (sliced thin),
1 large yellow pepper (sliced thin),
1 large green pepper (sliced thin),
1 cup diced plum tomatoes,
1 cup chicken stock,
1 tablespoon chopped garlic,
1 teaspoon oregano,
1 teaspoon black pepper,
2/3 cup extra virgin olive oil,
4 tablespooons grated Romano cheese,
1/2 lb. cooked pasta.

Heat oil on high. Add peppers and onions. Season with salt and pepper.
Cook until limp and add cooked sausage.
Saute together until sausage and peppers are golden.
Add garlic, black pepper and oregano. Toss and continue cooking 1 minute.
Add tomatoes, chicken stock, and check seasoning. Toss with cooked pasta and top with cheese.
Makes 2 servings.


Sweet and Sour Chicken

1 pkg. (2-1/2 lbs.) boneless thighs,
10 sprinkles of soy sauce,
1 - 4 oz. can unsweetened pineapple juice,
3 - 4 cloves of garlic,
4 oz. white vinegar,
14 oz. bottle tomato catsup.

Marinate 24 hours before baking,
Cut up each thigh into 4 peices,
Place in bowl, mince fresh garlic and add remaining ingredients to chicken,
Cover and place in refrigerator for 24 hours,
Take out of bowl and put into baking pan,
Place in pre-heated oven at 350 degrees F for 1 hour,
When fully cooked, the juice from the pan may be used to pour over rice.


Chicken Thighs Kiev

1 pkg. (2-1/2 lbs.)  boneless thighs,
dry chives,
minced garlic,
grated cheese,
butter,
eggs,
flavored bread crumbs.

Thin each cutlet,
Fill each one with a sprinkle of grated cheese, dry chives and mince garlic,
Put two pats of butter on each cutlet and then roll up cutlet,
Scramble egg and roll cutlet in egg and then in flavored bread crumbs,
Place rolled cutlet in baking pan.
Bake in 350 degree F oven for 1 hour.
